Ezekiel Bread Pudding

 Ingredients (makes up to 6  servings, ready in 1 hour)

  1. 8 slices of Cinnamon Raisin Ezekiel Bread
  2. 3 cups unsweetened vanilla almond milk
  3. 2 whole eggs
  4. 2 egg whites
  5. 1/2 tbsp of vanilla extract
  6. 1tsp cinnamon
  7. 1/2 tbsp nutmeg
  8. Pinch of sea salt
  9. Olive oil cooking spray
Optional – cool whip

Directions

  1. Preheat over to 350.
  2. Coat baking pan with olive oil cooking spray.
  3. Whisk ingredients together (except Ezekiel bread)
  4. Tear piece of bread and coat baking pan
  5. Cover the bread with wet mixture & with clean hands press until bread is evenly moistened.
  6. Bake in oven for 60mins
  7. Serve with cool whip or yogurt.

Nutrients Per Serving:  about 230 calories per serving & 9g of protein.
